Stracciatella

eggs: 2
semolino: 3 spoons
grated parmesan: 3 spoons
broth: 1 liter

Break 2 entire eggs in the pie-dish, add three spoons of semolino, three spoons of grated cheese, a pinch of salt. 
Little by little pour into a pie-dish a ladle of cold broth and mix it up well. 
Then pour at a single blow a mixture into a boiling broth stirring well with a fork. 
Make it boil at a moderate fire for 2-3 minutes stirring continuously for to reach stracciatella in small flocks. 
Semolino can be substituted by three spoons of cheese.
