There’s a real difference between the

The philosophy here is one of subtraction. No artificial additives, no emulsifiers, no hydrogenated or refined fats, no synthetic colors or flavors. Every flavor is made with carefully selected raw materials, and in place of the usual thickeners the gelato relies on natural plant fibers, with less sugar and less fat, keeping the full intensity and honesty of the taste.
Alongside the great Italian classics, there’s a wide selection of vegan and no-added-sugar flavors, from Raw Almond from the Val di Noto to Sicilian Pistachio and Dark Chocolate made with raw coconut sugar: a line for anyone who wants a more balanced treat without giving up the pleasure of gelato.

Among the house favorites, Raspberry and Basil has become a small classic. In summer the spotlight also falls on the Avocado with Lime, Black Pepper and Sea Salt flakes, fully vegan and with no added sugar, along with fresh sorbets like Lemon and Roman Mint, Passion Fruit with dark chocolate shavings, and an intense Absolute Ginger.
