Alessandro Ruver spent six years working alongside Gabriele Bonci, Italy’s most influential pizza innovator. At Pizzarium, Bonci’s landmark pizza al taglio shop just north of the Vatican, he transformed pizza in teglia, Rome’s ubiquitous sheet pan pizza, into one of Italy’s defining contemporary foods through  cold fermentations, rigorous attention to dough, and unconventional toppings driven by collaborations with small farms and artisan producers. Working in that environment, Ruver refined his understanding of dough, fermentation, and the traditions of Roman pizza al taglio before opening
Ruver Teglia Frazionata
on Viale Aventino, near the Circus Maximus in the Aventino residential district. Rather than simply extending Bonci’s legacy, he has developed a style that reflects his own meticulous approach to the craft, grounded in technical precision and quiet confidence.

His pizza begins with long-fermented dough that bakes into a crust both tender and deeply crisp, providing the foundation for toppings that shift with the seasons and draw on the ingredients and flavors of Lazio and Southern Italy. Signature combinations include the Ragùver, topped with slow-cooked Chianina ragù, Parmigiano Reggiano, and parsley; a deceptively simple pairing of potatoes and mozzarella; and more ephemeral creations such as roasted rabbit with carrot cream. Each slice  is carefully composed, allowing the balance of dough, topping, and texture to remain exactly as intended. Whether revisiting familiar Roman flavors or introducing unexpected combinations, Ruver’s pizzas are defined less by novelty than by clarity, restraint, and an unwavering commitment to exceptional ingredients.

Ruver belongs to a generation of young Roman artisans who are reshaping the city’s culinary identity from within. Alongside chefs, bakers, and producers who have come of age in the past decade, he represents a movement that values craftsmanship over spectacle. Their work is helping define what contemporary Roman food looks like: unmistakably rooted in place, yet responsive to the city as it continues to evolve.
