Mozzarella skewers (Spiedini di provatura)

provatura (mozzarella): 8
casareccio bread: 500 grams
butter: 20 grams
anchovies: 2
salt

Provatura is small fresh cheese as big as eggs, very similar to mozzarella but made of more tough pasta. It's a typical product of Latium.
String pieces of provatura into spiedini, salt them and pepper them, alternating and closing the ends with two sticks.
It is necessary to turn spiedini on the grill but it's possible to put them in the oven.
In the end pour on the spiedini a butter sauce and anchovies .
The sauce can be obtained by melting butter and smashing chopped and washed salted anchoivies by a wooden spoon.
