Croquettes of spinaches a la roman (Crocchette di spinaci alla romana)
ingredients (4 people)
spinaches: 1 kilo
ricotta di pecora: 200 grams
grated parmesan: 100 grams
nutmeg
eggs: 2
butter: 50 grams
flour
salt
olive oil
preparing
Boil spinaches on the steam, squeeze them and cut them into pieces.
Brown them in the pan for some minutes.
Remove them from the fire and add ricotta, parmesan and salt.
Mix up everything and make small balls of the dough.
The balls should be covered with the flour and beaten eggs ( a little bit salted).
Fry up the croquettes in lots of oil and dry it up with a napkin.
