Fried pumpkin flowers (Fiori di zucca fritti)

pumpkin flowers: 8
provatura (mozzarella): 100 grams
ham: 50 grams
anchovies: 50 grams
flour
salt
olive oil
brewer's yeast

Remove pistils from pumkin flowers, wash them and fill them with a piece of cheese or ham or anchovies.
Them dip them into a big bowl where a strechy batter has been already prepared (flour, water, salt, brewer's yeast).
Then raise the flowers carefully with a spoon and fry them in boiling oil, let them dry up in the napkin and bring them immediately to the table or keep them warm in the oven.
Provatura is a tipical Latium cheese more solid them mozzarella.
