Omelette in trippa (Frittata in trippa)

eggs: 4
sauce: 200 grams
grated parmesan: 50 grams
olive oil


preparing

Prepare a sauce of onion, carrots, parsley, oil, lard, white wine, salt and pepper.

Separetely make an omelette and cut it into stripes.

Dip pieces of omelette into the hot sauce. After it has boiled remove it from the fire.

Before to serve it spread it up with grated pamersan.
