Brains and artichokes a la roman (Cervella e carciofi alla romana)
ingredients (4 people)
calve's brains: 300 grams
pancreas of a calf: 200 grams
artichokes: 4
flour
eggs: 2
olive oil
salt

Clean and free pancreas and brains from the skin, boil them in the salted water and chop them into pieces.
Remove the stiffest leaves from the artichokes and chop them into slices.
Inflour the meat and the artichokes, let them soak in the beaten eggs and fry everything in a big quantity of olive oil.
Before serving dry them up on the napkin.
