Fettuccine with peas (Fettuccine con i piselli)
ingredients (4 people)
fettuccine all'uovo: 350 grams
peas: 350 grams
guanciale: 50 grams
onion: 3
ham fat: 70 grams
concentrated tomatoes: 1 spoon
salt
pepper
parsley
preparing
Chop finely small onions and cook them together with a fat of ham and guanciale (pillows), add some water if necessary.
Before onions get brown add a dressing of tomatoes and peas.
Add some hot water, salt, pepper, then cover and increase step by step the intensity of fire.
Drain saw-toothed fettuccine and dress them with some parsley.
