Spaghetti with cockles (Spaghetti con le telline)

ingredients (4 people)

cockles: 800gr
spaghetti: 400gr
garlic: 1 clove
chili pepper
parsley
olive oil


preparing

Pour the cockles for a few hours and rinse them thoroughly under running water.

In a large pan, let the cockles open over high heat. Filter the water and set aside (both the water and the cockles).

Brown the garlic in the oil.
Add the filtered water and the cockles and cook for a few more minutes with a little chilli pepper.

Cook the spaghetti al dente and toss them in a pan with the sauce.

Serve sprinkled with chopped parsley.
