Potato gnocchi (Gnocchi di patate)
ingredients (4 people)
potatoes: 1 kilo
flour: 400 grams

Mix up mashed potatoes with the flour and roll up the pasta until it is not soft and homogeneous.
Make rolls of 2 centimeters in diameter and cut them into small pieces in which upon a desire one can make a small sign for to absorb better the dressing sauce.
Cook it with lots of boiling and salted water, mix it and drain it before they rise up to the surface.
Sometimes if potatoes are too watery it's possible to add an egg to the dough.
Upon your wish dress it with sauce: ragu, tomatoes and basil, pork juice, roulade, butter and sage ecc.
