vineyards snails: 500 grams
peeled tomatoes: 500 grams
olive oil. 1 decilitres
garlic: 2 slices
Before preparation snails should be cleaned in water, vinegar and salt for a couple of days.Then they should be boilt for 10 minutes and rinsed out in a cold water.
First of all brown up garlic with oil. Before the garlic gets fair remove it from the fire and add anchovies, tomatoes cut into pieces, mint, salt, pepper and chilli.
As soon as the dressing gets consistent add snails and let it be cooked for 50 minutes more adding water if necessary.
