Vaccinara oxtail (Coda alla vaccinara)
ingredients (4 people)
calve's tail: 1 kilo
celery: 1
onion
carrots
olive oil
salt
pepper
chilli
wine
tomato pulp
broth dice: 1

On the rather large pan fry sligltly with oil the grated onions, carrots and celery washed and cut into pieces. As the celery withers add if necessary a bit of wine.
Then add a calve's tail priviously boiled (4/5 hours). Cook it for 15 minutes adding a glass of wine, salt , pepper and chilli.
When the wine is evaporated add tomato pulp and let the dish be cooked until meat gets soft and the sauce gets consistent.
