Il battuto is an ancient mixture and used in the classical roman cuisine in almost all soups. It should be browned at the low fire in the pan.
Bacon should be beaten on the chopping board with onion, celery stem, carrots and other aromatic herbs upon your wish.
Il battuto should be blended and added to the soup in the end of cooking.
