Rice with chicory (Riso con cicoria)
ingredients (4 people)
chicory: 800 grams
rice: 300 grams
lard: 80 grams
tomatoes: 4
parsley
celery
onion: 1/2
garlic: 1 slice
grated pecorino: 80 grams
salt
pepper
preparing
Fry slightly in the pan beaten lard, onion, garlic, celery, parsley, chopped tomatoes and lard.
Add some water and let it boil.
Add chicory previously boiled and cut into pieces, salt it and pepper it.
Cook it for 20 minutes adding some water if necessary.
Serve it with grated pecorino.
