Saltimbocca a la roman (Saltimbocca alla romana)
ingredients (4 people)
veal slices: 500 grams
ham: 200 grams
olive oil
sage
salt
pepper
dry white wien: 1 glass
preparing
Roll out slices and put on each slice a leave of fresh sage and a slice of raw ham that should be hold on a stick.
Get brown the meat in the pan with oil, salt and pepper.
Cook it at the live fire for some minutes.
As soon as the meat is colored, turn it round and place it on the plate.
Add at the end of cooking one spoon of water, wine and a nut of butter.
As soon as butter is melted pour the dressing on the meat.
Serve saltimbocca very hot.
