Trippa a la roman (Trippa alla romana)

ingredients (4 people)

trippa: 1 kilo
onion
carrots
celery
parmesan
mint
salt
pepper
chilli
broth dice
tomatoes pulp
dry white wine: 1/2 glass


preparing

Fry slightly in olive oil onion, celery, carrots and trippa chopped into slices(previously boiled).

Add half a glass of white wine and leave it to evaporate.

Add some salt, pepper, chilli, tomato pulp and a broth cube.
Let it boil for 40 minutes.
The juice should be thick.

Serve it with grated parmesan and mint.
